In addition, if you ask the cook (at any of the restaurants you're interested in) during an off time of day - it helps not to ask in the middle of a busy lunch or dinner hour if you can help it - about what they can do for you for a good vegetarian meal, they are usually happy to oblige as best they can. I've had a number of vegetarian and vegan visitors ask about this and given that advice and they all seem to have had things work out well.
Milka and Superette Mayra try to keep fresh tofu stocked. But if they don't have it for some reason, they do have Rolands canned tofu, which I've used in baked dishes and even sauted...it works in a pinch! Texture is almost like baked already and taste is fine, doesn't have the *canned* tick on the tongue you might expect ;)
