Vegetarian in Culebra

Does anyone have advice for a vegetarian going to Culebra? I don't eat meat or seafood, but eggs and cheese are ok. I usually don't have a problem finding stuff to eat (fruits, beans, rice), but wanted to know of any particularly good or friendly places I should check out.

I do not think that you will have a problem finding food to eat in Culebra. Culebra has half a dozen grocery stores that you may find rice, pasta, potatoes, some veggies. Some of the restaurants serve rice and beans with their dishes, so just tell them to hold the meat. Enjoy Culebra!

As John said, you won't have a problem finding fruit and vegetables in the stores.
One piece of caution for restaurants though: rice and beans are sometimes made with lard and if you do not specifically ask, 'how are they made' you might just find out, that that 'secret' ingredient is bacon bits.
There used to be a health food store on the island, but the demand wasn't really there, since a lot of the local vegetarians (many) were so used to bringing 'their' specialty foods from the main island ...
To make a long story short, you can find food but if you want several varieties of tofu to choose from and are picky whether your carrots were grown organically, you might have a hard time.
