I too was worried about my camera since it was rather large and I found that when we went snorkeling I left my bookbag on the beach and every now and then we looked up to "check on it" but soon as time passed I didn't really think about it to much as everything was ok and safe. Depending on your own personal comfort level and of course the size of your camera you can get these water proof bags at a marine store. In fact it was the only place I could find them. They are aweseom you can put anything in them we got them to put our phone and our mini little camera in them so I can try to take underwater digital pictures which happened to work out pretty well considering the little bit of thought put into it and for our phone so we could keep track of time so we did not mis sour flight home. (it seemed easier than having to get out of the water every so often).

I would look into if you can keep your tent up all day I feel like I remember seeing tents up all day long. as far as staying under shelter if you can not keep your tent up. I would say go hang out and eat someplace. Mamacitas was a blast for us and we stayed for a good while. Hopefully you will not experience bad weather.
