Call Molly and Jerry
They have a lovely guest house they rent out in Culebra. It is absolutley darling and very very clean. If you don't want to rent a jeep to get to the beautiflu quiet beaches, they will take you there and pick you back up. Also, they have a boat they can take you fishing and snorkeling or scuba diving. Also Molly is an amazing cook, so if you have any luck fishing she'll cook you the best dinner you have ever eaten.
As far as the water skiing...just ask them, they can help you with that I am sure.
