That sounds like a great plan, and a great time of year to do it! You may want to consider spending Tuesday night at/near the rainforest, rather in the "city" of Fajardo. You will LOVE the nightnoise of the rainforest, and it is still close enough to make the 9am ferry. I recommend Ceiba Country Inn http://www.geocities.com/countryinn00735/. We stayed there for one night in September, 2008.
Jerry's Jeeps is also our choice for car rental.
I haven't been to Seabourne in many years, but believe it is a good choice as well.
