I have to say I never, ever, had a person ask for anything different for the breakfast part. Of course, it was a continental breakfast and it was always really good croissants, muffins and fresh fruits, with coffee and teas. We also had a happy hour, great cheeses, crackers, free pina coladas, honor bar. No one complained, though we did have the occasional guest who, I think, made those freebies their meals for the day! Sometimes I wanted to smack a hand and say, Didn't you get taught that sharing is nice?
If I was hoping to write a cook book off of it, I might have gone the full breakfast route but that would be more difficult and quite a bit more expensive. Most people just wanted to get to the beaches with a light breakfast anyway.
