MJ, you have such a great way of putting things!
Herb, there is a definite problem you're facing here because most people go to Culebra because it's pretty much the OPPOSITE of what your wife is hoping for.
I can tell you that my family of 7 will be going to Culebra in January for precisely that reason... to experience an unspoiled, rustic, Caribbean-like-it-used-to-be-decades-ago vacation.
My suggestion to you is that since you've done it your way for so many years, do this one for your wife. Take her to a place that is the opposite of what you've always done... somewhere she can feel pampered, serviced, plushed, poshed, etc.
If a cruise isn't to your liking (and you should strongly consider it if you haven't already), then an AI could be a lot of fun for your wife. Spend the extra bucks on this special anniversary.
And remind me of my words three years from now when I hit my 30th anniversary, because I tend to think just like you! LOL.
