I grew up eating eggs from free-range chickens before anybody had heard the term "free-range." It was just how all us folks raised chickens -- they were in their coop at night, then free to roam and eat whatever during the day. They ate grasshoppers, earwigs and all kinds of other bugs, as well as grass and any grain or seeds they could find. The eggs tasted great! I would not hesitate to eat eggs from Culebra's chickens as long as I knew they were laid within the past few hours. Unlike the eggs you find in the grocery store, many of the eggs laid by the free-range chickens in the Caribbean are probably fertile, which means if they are a few days old you may find a partially-developed chick when you crack the egg.
