Any standard rig with sinker, about 3 feet of leader to the hook and some squid will get you some action. Just about any dock will likely produce fish. Evening or night seems to be good for larger fish. We got snappers, but I've seen some nice tarpon come in the evening. We were just doing some casual dock fishing but I'm sure you could get some yellow snapper off the beach- I've actually seen them swimming in the waves at Flamenco.
