I think we may have been yanking your chain a bit Herb.

There are indeed some places that are trying to be smarter than your average fare, but there are also plenty of (ok, enough of) mom and pop joints and with a few exceptions they're hard to miss. It's not really the variety, but the hours of operation.

Anyway, except for a drunk winter night in Chicago (and I guess even that has its Tom Waits-y charm) stumbling across them is part of the fun IMHO.
